Vegan Breakfast Sausages

"From "Vegan Comfort Food" by Alicia Simpson. I slightly modified it. This is the best faux sausage I've found! I have finally stopped buying veggie sausages! Hallelujah! Recipe makes a ton, but halves easily. And so inexpensive comparatively!"

  • Combine all dry ingredients in a large bowl.
  • In separate bowl whisk all the wet ingredients.
  • Stir the wet into dry and mix lightly until combined and spongy dough forms.
  • Form 1/4 to 1/3 cup of dough at a time into a small log about 6 inches long. INDIVIDUALLY wrap in aluminum foil (tightly, twisting the ends at the top and bottom like sausage casings. If they aren't wrapped tight enough they will burst out.
  • When they are all wrapped up arrange them into a steamer basket over boiling water, and steam for 30 minutes.
  • Cool, and remove from foil. Keeps in the fridge for up to a week. I freeze mine and take out as needed.
  • What you have here when you're done is equal to raw sausage! Is isn't done yet! :) I like to saute it in a little oil in a cast iron skillet. It also crumbles up swell for tofu scrambles etc. Or slices for sausage and peppers. Sometimes after I unwrap these I immediately throw them in the oven with a little oil for another 10-15 minutes to crisp up the "skin".
  • Note - I don't have a steamer. I use a strainer fitted over the top of a pot making sure the bottom of the strainer doesn't touch the water in the bottom of the pot. Then cover with a lid.

  2. Can this be used for pigs in a blanket? If I just made them into mini links, do you think they would hold up? Thanks!
     
  3. I just made a batch of these and I think I didn't have the foil pieces big enough when I made them because they burst. I've made them before and this hasn't happened. My question is, are they still edible or should I toss them? I think they might still be edible but they or kind of deformed and ugly. What should I do?

  1. Just made this and I have to say it's delicious!! I'm usually not a fan of seitan but the taste and texture is perfect. Only thing I changed was using 1 tbsp of smoked paprika and 1 tbsp of regular paprika. My son literally did a dance after his first bite. Goodbye store bought veggie sausage! *I used instant pot to steam. Add 1 cup of water, place foil wrapped sausage on trivet, close lid and seal then select steam and adjust to 30 minutes. I did qr but you can do nr.*
     
  2. made for Christmas brunch. my son and his gf are vegan, vegetarian. perfecting my my wrapping technique would make them prettier. Good flavor, browning gives a crust and better texture. pretty yummy from a meat eater. The kids loved them. I've been commissioned to make more. browning in air fryer is easy.

  3. I LOVE!!!!!! This recipe I make it every other week for weekend family breakfast, I fry them in a pan until golden then add so maple syrup and OMG!!! they are amazing......I only thing different was i added garlic and onion dry chunks and for dinner I ould make them into bigger ones and do the same as i do above its to die for
     
  4. 5 Stars ... WITH A CORRECTION ... These saussages will taste and smell like hoover bags unless you remove the chickpea flour. Not only does the chickpea flour make them taste and smell weird it also drys the textue. Remove the chickpea flour and these are perfect. I just added the same ammount I took away in vital wheat gluten.
     
  5. I've been making these on a regular basis for a few months now. Its so much tastier and cheaper to make a batch of this then to buy those expensive vegan products from the grocery store. These are delicious!

Might need some slight changes, but in general the recipe works and others might enjoy this more than I did. 2 Stars: Fair, recipe did not work out well for me and I cannot recommend it. Besides that (in the food dept) I've got my hands in a little of everything. I do a lot of canning these days. As well as drying and freezing. I do a lot of berry picking in the summer as well as other wild foraging. I'm just learning, but I'm coming along fast. ( I may have an overactive imagination :). I love backpacking and camping. If there wasn't anyone around to drag me home I'd probably just disppear into the wilderness never to return. I have a major interest in Mythology and History (focusing mainly on Ancient Greece, but I'm enthralled by all ancient history and interested in anything up until the second half of the 20th century) I really enjoy learning the old ways of doing things. I'm definitely not suited to this cellphone infested, computer run, digitalized existence we're living, it all just hurts my head and makes me wonder if anyone has any original thought or imagination left. Halloween (Samhain) is another of my favorite things in the world. I wait for it all year and make a full week out of it. Building props and setting up yard displays keeps my head spinning strait through Sept and Oct. I admit I still go trick or treating some years. Other years I try to organize scavenger hunts or treasure hunts etc. Wish I could get more people interested though! Usually just 3 or 4 of us. I also do all the traditional things for a proper Pagan New Year so it's a very busy week! I love summer and I live for the heat. 90 degrees is when I feel the best. I hate the cold! Despite that Autumn is my favorite time of year though! Fairs, festivals (anyone who lives in PA knows we have some of the most crazy, odd and fun festivals!), Harvest feasts, Fall foraging and gathering, corn field fights, haunted hayrides, pumpkin patches, crafts, all the fresh veggies! The leaves ,the trees, the colors, dressing up, popcorn balls, candy apples, apple picking, apple cider, Mabon and Halloween, the smell of fires, and herbs.... I could go on and on here. My dream in life is basically to live off the grid. To own a large piece of land in the middle of nowhere surrounded by forest. Enough room to grow the majority of our own food ("our" is still up in the air) To have a little cabin, some chickens, a couple of horses, my cats and a barn big enough to accommodate a small wildlife rehab center (I'm hoping to become certified in the next couple of years. I've rambled on enough I think.
