  • Preheat oven to 400°F.
  • Cook broccoli and cauliflower in boiling water for 3 minutes.
  • Drain and set aside.
  • Blend together milk, oil, flour, nutritional yeast flakes, salt, and nutmeg until smooth.
  • Cook, stirring well, over medium heat in a saucepan until thickened.
  • Turn off heat.
  • Add broccoli and cauliflower to saucepan and stir until combined.
  • Pour mixture into a greased 8x8-inch casserole dish.
  • Sprinkle panko bread crumbs, cheese, paprika, and then parsley over the top.
  • Cook for 10 minutes.
  • Enjoy!

  1. Really, good, quick and easy. Followed recipe exactly except I didn't have any vegan cheese and since we are not strictly vegan substituted a couple of tablespoons of parmesan cheese. Also, I find it easier to make a white sauce like this in the microwave - after whisking everything together heat on high, stirring after 1- 2 minutes. Mine was thickened after only 3 minutes.
     
  2. Really loved this casserole! Just finished making it and already on my second bowl :) It was simple and quick to make -- although, I did double the baking time. It's best to keep an eye on the breadcrumbs and cheese and just remove when browned. Mine was about 20-22 minutes.

  4. I gave it a try with a few alterations, I can't remember exactly as it was last week, I think onions garlic and green peppers and it was amazing
     
  5. This was really creamy and easy to make. I substituted ground cashews for nutritional yeast and it still turned out good. It tasted a little bland so next time I will add garlic salt.
