Vegan Macaroni and Cheese

ingredients
- 1⁄2 cup nutritional yeast flakes
- 1⁄2 cup white flour or 1/2 cup wheat flour
- 1⁄2 - 1 teaspoon salt
- 1 -2 teaspoon garlic powder or 2 -3 cloves garlic, chopped
- 1⁄4 teaspoon paprika (not necessary if you don't have any) (optional)
- 2 cups soymilk
- 1⁄4 cup margarine or 1/4 cup oil
- 1⁄2 teaspoon prepared mustard or 1/2 teaspoon mustard powder
- 8 ounces elbow macaroni, cooked and drained (or any shape pasta)
directions
- Mix dry ingredients in a saucepan.
- Whisk in milk.
- Cook over medium heat, whisking constantly, until it thickens and bubbles.
- Cook and stir 30 seconds more, then remove from the heat.
- Whip in the margarine and mustard.
- Add more milk or water if mixture is too thick.
- Add hot, cooked macaroni, and mix well.
- Enjoy!

Carol has always posted delicious vegan recipes and this one is no exception. I used lots of paprika which gave it a lovely color. The kids doused it in ketchup, but still ate the whole thing. I didn't tell them it was vegan, and they never even noticed, which in itself is an excellent recommendation. ;-) Thanks Carol!

Wow! We were pleasantly surprised by this recipe. It doesn't taste exactly like real mac and cheese, but it tastes good in its own right. We aren't vegan, but my husband is severely lactose-intolerant and this dish worked very well for him. I used Silk almond/cashew + protein milk instead of soy milk. I also added 1/2 tablespoon lemon juice to add some tang and ended up using 3/4 teaspoon salt. Very nice recipe!

Overall, this is a good vegan mac and cheese recipe.<br/><br/>The good: The texture is perfect! It's creamy and thick, just the way you want it to be.<br/><br/>The bad: I don't think the flavor is quite right. I added some onion powder for a little extra tang, more mustard (both prepared and powder), and more salt. The flavor was pretty good, but I don't think you're going to trick any non-vegans into believing it's "real" mac & cheese.<br/><br/>Overall: This is still a very good recipe. We ended up adding stewed tomatoes, broccoli, and vegan not dogs to make the meal, and we enjoyed it very much. I ate the leftovers the next day, so that's a pretty good testament!<br/><br/>Just a note: we added twice the amount of pasta than the recipe called for because we seemed to get A LOT of cheese sauce. FYI

I'm not always really specific about measurements, and that's because I go by feel, so if you want to add a little more or a little less -by all means!
