Vegan/Vegetarian Sausage Patties

"This is modified from http://hellyeahitsvegan.com/?p=755, which has some lovely step-by-step photos. My meat-eating husband said, "In some ways I like these better than real sausage." They definitely wouldn't fool anybody, but they will satisfy any craving you may have for breakfast sausage without harming pigs or raising your cholesterol, and they taste MUCH, MUCH better than any vegetarian sausages you can buy in the freezer of your health food store. Enjoy with hash browns, fruit and Recipe #364735 for a vegan breakfast feast! You might want to double the recipe, though."

  • Stir together tvp and boiling water and set aside to soak for 5 minutes.
  • Meanwhile, mix flour, flax, bran, and dry spices; stir to incorporate. Stir in tvp. In a measuring cup, measure out water; add liquid smoke directly to the cup and stir, if using (this way the smoke will be evenly distributed). Stir in other liquid ingredients, then add wet to dry; mix well. With your hands, form mixture into 2" balls and flatten slightly into patties.
  • Fry in oil in an uncovered frying pan on medium heat, about 2 minutes per side (or until browned).
  • Freeze leftovers (if you have any) and microwave 1-2 minutes to enjoy on busy weekday mornings.

  1. These are perfect. I've been looking online for a recipe to mock Morningstar veggie sausages because they are so darn expensive. I love them, but they are also filled with some garbage ingredients. I altered this recipe by using a sausage spice mixture from the website, but otherwise I made them like the recipe. Delicious! Thanks!
     
  2. I absolutely LOVED these. I had all the ingredients on hand, and they were really simple to make. I did make them the afternoon before, portion them out into 2" balls and refrigerated them until the next morning. I followed the recipe exactly, except for the fennel seed (don't have that on hand) black pepper & cayenne. Instead, I used about 1 tsp of the Penzey's Breakfast Sausage spice blend. I read the other reviews and decided to cook the patties for maybe 3-4 minutes on each side. They browned nicely, and the centers were not mushy at all. I will say I am VERY excited to have found this recipe. I've had the "tube" of vegetarian sausage that they sell in the stores (Gimme Lean??) and we think it's pretty awful, tasted like SOAP! This will be on the brunch menu from now on!!

  4. Thanks so much for sharing! This recipe is FANTABULOUS! Fast...check! Tasty...check! Easy...check! Two quick tips: (1) make sure you oil, wet with water, or butter your hands when making the patties and (2) next time I'm going to add some hot sauce to the mix before I fry. Adding after took it over the top! So good! Watch out Morning Star...you may have just lost a customer ??
     
  5. These didn't work out for me. The flavor was too strong and it wasn't a sausage type flavor to me. I like the look of these and will tinker with the base, but change the seasoning to make it taste the way I would like. I'm really glad I tried these, they were fun to make. Thanks for sharing the recipe.

I try to eat vegan, and most of my creations are also gluten-free because my husband is Diabetic/Celiac. I don't post any recipes I have not personally tried and liked.
