  • Rinse quinoa with cold water according to the directions on the package; drain.
  • In a medium saucepan, combine quinoa and broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until quinoa is tender and liquid is absorbed.
  • In a medium skillet, heat oil over medium-high heat. Add leeks, peppers, carrots, and celery. Cook for 6 minutes or until vegetables are tender, stirring occasionally. Stir in garlic; cook 1 minute.
  • Combine vegetable mixture and quinoa. Stir in cheese, salt, and pepper. Sprinkle with parsley.

  1. Really wonderful quinoa, loved all the fresh vegetables melded into the wonderful mix of grain. I ran out of quinoa - (for the full servings) so I added a bit of wild rice along side. It's so wonderful, you will have to eat the first bowl all by yourself, and then squeak in for a second helping! Very easy to put together, and the topping of the parmesan cheese is a perfect addition. Made for *Photo Swap* Photo Forum January 2010
     
  2. Because I hate to over-salt a dish, I only added what the recipe said. It was a little on the bland side, so I doctored it up with a little more salt and some extra garlic. Anyway, it turned out just fine - loved all the veggies. And quinoa is the cutest grain with those little circles!!

  4. This dish is really full of flavor and has the added plus of tons and tons of veggies throughout. I used red quinoa and just eyeballed the veggies. It was served at room temperature with Recipe #169824 for a delicious Bayhill meal. Made for PAC Spring 2013.
     
  5. A new favorite dish for me! This quinoa pilaf reminded me of a pilaf I made with brown rice, enjoy that hint of nuttiness. I used vegetable broth and dried parsley since that was all I had on hand. Perfect for lunch or a light supper! Made and reviewed for the Australian/NewZealand Forums Recipe Swap #73.

My husband and I live on 10 acres where we grow alfalfa and have a small family orchard of fruit and nut trees.
