ingredients
- 1 carrot
- 1 red pepper
- 1 green pepper
- 1 green zucchini
- 1 yellow zucchini
- 1⁄2 teaspoon sugar
- 1⁄2 tablespoon olive oil
- 1⁄2 tablespoon butter
- salt
- 1 garlic clove
directions
- Melt butter and oil in pan.
- Add thinly sliced halved carrot.
- Cook for 1 minute.
- Add rest of vegetables which have been thinly sliced.
- Add sugar.
- Stir fry for a few min until just tender.
- add salt at end of cooking.

A lovely vegetab le stir fry! I used just the green zucchini, peppers, carrot and added red onion, cauliflower and broccoli. As I was finishing cooking it I felt it was a wee bit dry so I added a couple of tablespoons of chicken broth and 2 tablespoons of soy sauce. We enjoyed it very much and will make it again.
