Vegetarian "baked" Beans (Crock Pot)

"Based on Recipe #115501, Slow Cooked "baked" Beans by Grease. I changed the recipe to make it vegetarian and to accommodate my very large crock pot. This recipe should be able to be halved pretty easily. Cooking time will vary according to how long you have soaked the beans, what size crock pot you have and the kind. Different ones seem to cook at different temps. This recipe is on the sweet side, so adjust for your own taste. Would taste great with veggie hot dogs."

directions

 • Soak navy beans overnight- the longer the better. I usually soak them for about 12 hours.
 • Drain beans and rinse off. Put into crock pot along with the rest of the ingredients.
 • Cover crock pot and cook 7-8 hours on high or 10-13 hours on low. These cook times are approximate. Cook until the beans are finished. Add water to crock pot if needed.
 • Enjoy!
 • Note: Cook time listed does not include soaking time.

 1. This may be the best recipe I've made in the crockpot, but I used this recipe as a guide and tweaked it a lot. It's far too sweet, I cut down the brown sugar but will cut it again to 3/4 c. I used a bottle of beer instead of the water, and crushed tomatoes instead of ketchup, and a whole onion and two cloves of garlic. For very little work we have a delicious pot of beans and lots to freeze.

 2. These are very yummy beans and will last us several meals as it makes a TON. I did feel like they were missing something, maybe more garlic or some smoke flavor. I think I will follow another reviewer suggestion and add some smoke flavor next time. I also decreased the brown sugar by a third and they were still very sweet. These were very good though and I will definitely be making them again!

 3. Yes, these beans are sweet, but there's nothing wrong with that! I did halve the recipe without a problem. I didn't use fakin' bacon, so I added a few drops of liquid smoke. I also used fresh minced onion instead of the dried flakes. The beans tasted wonderful and did not dry out after all those hours of cooking. Thanx for sharing this!

 4. These are wonderful beans. Mine were not actually vegetarian, as I used homemade chicken stock. Really, I was more interested in meatless baked beans (without bacon), so this worked just fine for us. I used one pound of navy beans and 1 pound of great northern, and splenda brown sugar (at half the stated amount), and left out the fake bacon. We put the soaked beans in, and then mixed the other ingredients in a bowl. Poured them over the beans and mixed well. I'm so glad to have a crockpot that actually cooks beans until they are soft! (My old one did not.) These are very sweet beans; the kids loved them. We served them with hot rolls and frozen peach slices. Wonderful dinner. Thanks.

 5. The recipe is far too sweet! More than 500 grams of sugar in total! So 50 grams per serving.... Thats like drinking 2 full sugar coke

I live with my hubby and three feline children in Oakland by Lake Merritt.

My rating system:
5 stars if the recipe works without having to make changes (my own subs just for personal preference do not count)
*New Rule: If hubby says "mmmm" or "this is good" without me asking if he likes it, it automatically gets five stars
4 stars if the recipe needs a minimal amount of changing because the recipe does not work the way it was written or if overall it just didn't WOW me.
3 stars and below if the recipe just does not work or if the instructions are not written clearly enough to make it.

Please know that I will change your recipe to fit my diet. I mean no disrespect, but since I have to diet I have to do it. I refuse to limit myself to recipes that already fit my diet and like the challenge of changing already existing recipes to be healthier. I will leave out the oil, leave out or replace the cheese and milk with a non-dairy alternative, and use whole grains. I will also leave out meat and broth and choose vegetarian, low sodium versions/alternatives. I still rate recipes that I make these changes to.

But, if I use a recipe as inspiration only- meaning I got a great idea from it but changed it all around- I generally will not give any stars but will put a little note stating what I did. I love to give credit where credit is due.

I don't deduct stars if I personally do not like an ingredient in the recipe. I don't make recipes that I think that I won't like, which is why you will probably notice that most of my ratings are pretty high. I think it is silly that people choose to make recipes that include ingredients that they don't like then rate them poorly saying "I don't care for..." Anyway, you get the idea.

I've participated in
