  • 1 13 cups Morningstar Farms Meal Starters Grillers recipe crumbles
  • 1 cup sliced fresh mushrooms
  • 12 cup coarsely chopped onion (1 medium)
  • 1 (18 1/2 ounce) can progresso light italian-style vegetable soup
  • 34 cup uncooked bow tie pasta, pasta (farfalle, 2 oz)
  • 2 cups fresh baby spinach leaves
  • 14 cup shredded mozzarella cheese (1 oz) or 1/4 cup parmesan cheese (1 oz)

directions

  • In 12-inch nonstick skillet, cook soy crumbles, mushrooms and onion over medium-high heat 4 to 6 minutes, stirring frequently, until crumbles are hot and vegetables are tender.
  • Stir in soup. Cover; heat to boiling. Stir in pasta; reduce heat to medium-low. Cover; simmer 10 minutes.
  • Add spinach; cook uncovered 3 to 5 minutes, stirring occasionally, until spinach is hot and just begins to wilt. Sprinkle with cheese.

  1. this was soooo good -- i made 8 servings of this for a party and everyone loved it. i used a diversity of mushrooms in it (oyster, shitake and baby bella). had some left over and it was even better the next day.

I am a mom of 2 (a 3 year old daughter and a 6 year old son). I've been married for almost 8 years now. I love to cook, but as I am a vegetarian (have been for 10 years now!) and my husband and kids are not, I am always looking for a happy medium at dinner time, which is what peaked my interest in cooking.
