I've made this soup at least a dozen times. I use vegetable broth and smoked Gouda. It's turned out awesome every time. I specifically like this recipe as it's closest to French onion soup I used to eat while living in Europe. It's a family favorite and I've made it for numerous friends. Everyone loves it!
