Vegetarian Pho (Crock Pot)

  • In crock pot combine the first 7 ingredients (onion - broth), cover and cook on low for 6 hours.
  • Meanwhile, heat oil in skillet over medium high heat and add seitan strips. Brown on all sides. Remove from heat and set aside.
  • Strain broth/stock and return broth to crock pot.
  • In a small cup combine miso paste with water.
  • In a small bowl combine the next 2 ingredients and the miso/water mixture. Add to broth in crock pot. Stir in drained rice sticks and seitan. Cook for 5-10 minutes longer or until rice sticks are soft.
  • To serve, ladle soup into bowls and garnish with bean sprouts, scallions and cilantro.

  1. My husband and I enjoyed this very much! Wonderful smell while cooking. We didn't have seitan so I substituted extra firm tofu. We will have this again!
     
  2. I have a copy of the cookbook that this recipe comes from and I've always wanted to try it. It was prepared as written except that I omitted the seitan and didn't use scallions and cilantro as DD doesn't care for them. The aroma while cooking was wonderful, however I think the flavours were a bit too exotic for us to enjoy this more. Not the fault of the recipe at all but rather our taste. Made for Newest Zaar Tag.
     
  3. I made this recipe never having had Pho before, so I have no idea if it tasted the way Pho is supposed to taste, but it sure was good! Easy too! The next time I make it I will go to Chinatown for the star anise and I had to substitute the green chili with Korean red pepper since that's all I had handy. I also used extra firm tofu instead of seitan and fresh noodles which I added immediately prior to serving. I will definately make this again!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
