ingredients

5 lbs ground venison
5 lbs ground beef
2 ¹⁄₂ tablespoons sugar
2 tablespoons ground coriander
2 tablespoons ground sage
2 teaspoons paprika
2 teaspoons cayenne pepper
4 teaspoons dried rosemary
2 tablespoons dry mustard
2 teaspoons pepper
2 teaspoons nutmeg
3 ¹⁄₂ tablespoons salt
hog sausage casing

directions

Combine seasonings in 1 cup of cold water.
Mix seasonings into combined beef and venison mixture and let sit in the refrigerator or a cooler overnight.
Stuff into casings and package.
Cook as desired.
