Viv's Raisin Pie

1 9-inch pie
ingredients
- 2 cups raisins
- 1 1⁄4 cups water, cold
- 1⁄2 cup orange juice
- 1⁄2 cup brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1 teaspoon orange rind
- 1⁄8 teaspoon salt
- 1⁄4 cup water
- 1 tablespoon vinegar
- 2 tablespoons butter
- 1 pie pastry, top & bottom
directions
- Boil raisins, first amount water, and juice, for 5 minutes in a covered pot. Combine the following: brown sugar, cornstarch, cinnamon, orange rind, salt (dissolved in second amount of water). Add to cooked raisins.
- Bring to boil, stirring.
- Remove from heat. Add vinegar and butter.
- Pour into unbaked pie shell.
- Top with other pastry.
- Bake in hot oven (425 F) for 25 min or until done. From: Vivian Hillier, Martensville SK.

I have never considered raisin pies among my favorites -- until now! When I learned we had three unopened boxes of raisins in the cupboard I decided to give it a try and take it to a covered dish dinner tonight. I read most of the recipes and decided on this one primarily because it incorporat ed orange juice, orange zest and cinnamon, which were unique to this recipe. The result was outstanding with just enough tartness to make a big difference from most other recipes -- it even garnered praise from people who didn't like raisin pie! The results belie the ease of preparation. Definitely a repeater. Too bad we aren't allowed a sixth star! One comment -- I was fearful the finished product would be too watery so I poured off most of the unabsorbed liquid after plumping the raisins. Next time I will include all the liquid.

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!)
The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own.
I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me.
Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
