Volcano Potatoes - Too Retro!

"This is from an old edition of the Better Homes and Gardens cookbook. Preparation and cooking times are guesses (my mom made these, not me!), and do not include time to cook the potatoes. These would be great for a retro-themed gathering."

directions

• Preheat oven to 350 degrees Farenheit.
• Whip potatoes with enough hot milk to make light and fluffy, approximately 3/4 cup.
• Season with salt and pepper.
• Pile into greased 8-inch round baking dish, mounding into a volcano shape.
• Make a crater in the center. (My mom would press a one-cup measuring cup about halfway into the potatoes, maybe a little more.).
• Whip the cream, and fold in the cheese.
• Pour cream and cheese mixture into the crater.
• Bake for about 20 minutes, or until lightly browned.

1. I added some hot sauce and it was awesome. Love this recipe

2. I have been looking for this recipe for awhile! A friend told me about it, she remembered it from a childhood cookbook she had that a college room mate stole. She will be so pleased to know I found the exact recipe! Thanks for posting!

3. I had to try this recipe because of its name. And we love it! The kids now want it every night, and even asked to have the leftovers for breakfast! Served it with Roast Chicken and a salad.

4. This was fun to make even though my potatoes were too moist and didn't quite make a volcano, more like a mound. But we really enjoyed these potatoes. Served with Whiskey Caramelized Salmon, we had a good dinner!

5. We absolutely loved this (very rich) potato dish!! I never heard of this recipe before and was curious to try it. The cream mixture slightly overflowed from the crater and gave it a nice golden covering. The remaining mix in the crater made a nice creamy sauce. My only daubt about the recipe is that it states it serves six...since we almost finished it between the two of us!!!! Thanks Kitten for posting it!

Behold, the worst picture of me ever taken, I think. I'm in distress over the paint color that you see behind me, and am suffering from brain scramble after looking at too many potential paint colors over a very short amount of time. However, it's one of those "me, now" pics that amuse me, so I figured I'd share. Onward... Hi there! Self description always throws me, but I'll try: I'm a hyper, writing, Yoga-practicing, fashion-loving, almost-constantly-reading, very Type A, highly domestic ovo-lacto vegetarian who is obsessed with Nutella and has a very personable German Shepherd/Husky mix named Totsi. I think that just about covers it. Sometimes, everyone needs a little Totsi, so here she "bee":
