  • Sift dry ingredients.
  • Beat eggs, milk, & melted lard.
  • Add wet mixture to dry ingredients.
  • If sweet waffles are desired, add the sugar.
  • Pour onto a hot waffle iron.

  1. Easily converted to a vegan waffle by substituting flax meal for the eggs, using coconut oil in place of the lard, and non-dairy milk of choice. Very tasty! I also added 1 teaspoon vanilla and maybe 1/8 teaspoon of allspice. Thanks.
     
  2. The dough was a little too thick so I added probably 1/2 cup of milk. The taste is great. I didn't add sugar. Thanks for posting :) Made for Holiday tag game
     
  3. Very delicious. This is our favorite waffle recipe. I used the oil instead of lard as suggested by another reviewer. I also added fresh blueberries & blackberries.
     
  4. My husband always makes waffles and ice cream for New Years and this year I didn't have enough of the boxed mix to make a batch. So off to food.com to find a recipe I could mix up for him. I have wanted to try a scratch recipe for awhile now, I make pancakes from scratch (found on this site naturally) and knew waffles couldn't be hard with the right recipe. This is definitely the right recipe! It filled the waffle maker 31/2 times or 14 waffle squares. They turned out so crispy and good they held the ice cream perfectly. My husband was throughly impressed. As mentioned in previous posts I used the 1/4 cup oil instead of shortening much easier and I did add the sugar, which was not noticeable but I think added to the over all flavor of the waffles. Thanks Chef for this keeper recipe.
     
  5. Great waffles. I made them twice, both time doubling the recipe. Both times I used white wheat flour, oil instead of lard, eggbeaters, and the optional sugar. The first time I used buttermilk (since I had it to use) and the second time skim milk. The first batch's batter was much thicker, but both batches turned out quite good. I am flash freezing a bunch for breakfasts.
