Waldorf Salad

"This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City."

  • Combine first six ingredients; sprinkle lemon juice on top.
  • Combine gently--best to use your hands to mix.
  • Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
  • Dress the salad with this.
  • Chill before serving.
  • Can be prepared several hours ahead of time if necessary.

  3. It's a nice start, but no banana! It gets quite brown and slimy very fast, even with lemon juice. Chop the other ingredients as directed, and sprinkle and hand turn with the bit of lemon juice (you can take or leave the marshmallow depending on personal preferences, I hate them and never add them as it makes it far too sweet and cloying, just personal preference though). Half the mayo and double the cream and whip it, start on low for 30 seconds then move to high for 1 minute 30 seconds to 3 minutes, until it gets a bit airy and fluffs about one half more than original size, while on high mix in sugar for 30 seconds slowly to incorporate without deflating. Then turn fruit mixture into creamed mixture with a spatula , folding the fruit into the cream dressing until well mixed, chill immediately, and serve cold.
     
  4. A member asked for a apple salad with cool whip. This was my mother's recipe. 2 red apples 1/2 cup crushed pineapple with juice 1 box instant butterscotch pudding 1/2 cup dry roasted peanuts 8 oz.cool whip. Mix all together and refrigerate.
     
  5. My favorite recipe for waldorf salad! The banana melds with the dressing to complement tart apples perfectly. All the ingredients are usually found in my kitchen, so I make it often as a no-cook side dish for barbecued meats, in place of potato salad. As JOY1998 suggested, dried cranberries are a tasty addition.

Tweaks

  1. No bananas, because they turn slimy, half the mayo twice the cream, and whip the dressing before adding the fruit veg nut mix.
