  • Beat all the ingredients in a large bowl, more flour may need to be added if it is a wet or humid day.
  • Let the mix rest for 30 - 60 minutes before using (on the bench, not the fridge).
  • Place a little butter in a crepe pan , swirl until bubbly and fragrant.
  • Add about 1/3 a cup of mix and swirl until thin and the pan is coated. Cook for about 90 seconds, flip to the other side and cook for another 30-60 seconds.
  • Serve hot or cold.

  2. I love pancakes and these were excellent. Quick and very easy to make with great results. I made some from my breakfast and some for my dh's dessert tonight.<br/><br/>Mine were filled with homemade strawberry preserves only, dh's were filled with the strawberry preserves , garnished with a little icing sugar and drizzled with lemon curd. Can you say decadent, but oh so good. Thank you for sharing this lovely treat. Made for ZWT8 - France.
     
  3. these are so easy. i did use 1 tablespoon of vanilla sugar as that is how i have vanilla now

I have a severe egg allergy and am lactose intolerant, I&nbsp;enjoy working out ways to still enjoy food minus eggs and milk. I have been married for 14 years and have one very happy and well fed hubby.<br />My goal is to try one new recipe a week, for the past 8 years have achieved this. &nbsp;I own over 300 cookbooks, but no longer purchase them - but regularly print out recipes to try later.<br />When I am not cooking, I am busy household of 6 and going to the gym (to work off the wonderful calories I consumed the day before) and helping at school and church.<br />My philosophy in life is: as we have to eat, we may as well eat well.</p>
