  1. This was so good! I made it in the crockpot and shredded the chicken about 30 mins before it was done cooking and then we made burritos out of it using black beans, reduced fat cheese and tortillas. I ate 2 of them!

  2. OMW!!! I found this recipe last night and usually my husband only eats fried chicken. I told him I'm watching it so you have to too. Not everyone is born 6'3 with great abs and just sit around and eat all the time;) some of us are 5'3 and stubby! LOL so he ate it and absolutely LOVED IT! He ate 3 chicken breast and couldn't wait for me to cook it again! EXCELLENT!

  3. Wow! What an easy recipe that actually tastes great. I made the chicken on the grill and simply topped with the salsa and sour cream when done. Very good!

  4. This was a rare treat - it was so quick and easy, kept well in the fridge and was so yummy. Being from the south makes me leary of recipes but believe me, this passed the cajun food test!

  5. I am not big on any kind of chicken, but this was pretty good. Not dry at all.

Tweaks

  1. I made this recipie as follows, but the chicken breasts I found were a little large, so there were only 3 of them instead of 4 (which is fine b/c there is only 2 of us in the house). I would have liked the taco seasoning to come through a little more- I think I will double that next time. Regardless, this was a delicious recipe. I substituted Greek Yogurt for sour cream and used picante sauce instead of salsa (it's the same only less chunky and thicker). This was definitely a hit and I'm sure we will make it again. Thank you for your figure-friendly recipe.

  2. Great flavor - I cut up the breast and sprinkled the Taco seasoning on them early in the day, placed in fridge. Pan fried the chicked and added the salsa to the pan for the last 3 minutes. It was too hot to use the oven and this worked well. Instead of sour cream I used whipped cottage cheese. We really enjoyed this dinner Thanks for posting Tasty & healthy!

  3. This recipe is now officially my favorite for chicken-it was delicious!!I changed the recipe slightly by grilling my chicken breasts instead of baking them, and cutting the recipe in half as it was just for one person.I also made fresh cornbread as my side dish.It went well with the flavor of the meat. This recipe is my new favorite-thanks so much!!

I have always loved to cook. This got me into trouble with my wieght, because I loved to eat what I cooked. I am now a weight watcher, I have to lighten most recipes. My favorite cookbooks are Taste of Home & Taste of Home Light. MY pet peeve is boxed dinners. I do love simple and quick though. I have 3 grown sons, one is in last semester of college, one is married and a new baby is on the way, so I will be grandma in January. My daughter-in-law hates to cook, they order prepared food off the internet, that makes me crazy. ha. I love animals, but right now only have one dog. A bloodhound. She is so loveable, I would recommend this breed to anyone as long as you have patience, but they are one of the most loving breeds out there. My married son has 3 lab. retrievers,a baby will be easy after those 3 monsters, as I lovingly called them when they were pups. My oldest son has a Rottwieller. I have had 3 Rotts, they have all pasted, buy they are a really great breed. They are so smart and loveable, I guess that's why people who chose to make them bad, can do so, all they want to do is please their owners. My real passion is shoes, shoes, shoes. I also love jewelry, but shoes, shoes, shoes,!!!!! Update I am finally grandma to the prettiest baby girl ever. She was born on Jan. 15, her name is Mariah. She is perfect!
