  • 1 (15 ounce) can pumpkin
  • 1 (18 ounce) box Duncan Hines Moist Deluxe Spice Cake Mix
  • 34 cup water
  • nonstick cooking spray

directions

  • Mix pumpkin, cake mix, and water together with a hand mixer.
  • Divide batter into sprayed muffin tins. (I use an ice cream scoop for ease).
  • Bake at 350* for 18-22 minutes or until the muffins "spring back" when lightly touched.

  1. Great quick muffins that even my kids love! I have changed the recipe slightly by adding an egg instead of the water, and then I add chopped apples, carrots, walnuts and raisins to really pack a nutritional punch. Cook for 25 minutes for 18 muffins.
     
  2. The muffins are really good but I am unsure how they are only 1 point each. With the nutrition info given, I figured it to be 2. Am I missing something?
     
  3. My kid loves anything pumpkin spice. My boss at work told me about this recipe. She loves them and so do I. I have to hide them from her.
     
  4. I skipped the water all together and they came out as 24 mini muffins/half muffins in my regular muffin tin. Very tasty and still as sweet as the original recipe! 3 pts though, not 2 pts.

  5. When I calculated it for the plus points it came out to 3 pts<br/>2 points for the cake mix<br/>1 point for the pumpkin puree<br/>0 for water.<br/>Great recipe though.
