- 4 teaspoons light stick butter
- 1 lb sweet onion, thinly sliced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1 cup reduced-sodium chicken broth
- 1 cup grape tomatoes
- 2 tablespoons red wine vinegar
- 1⁄2 head chicory lettuce, torn into 1-inch pieces
- 6 ounces Baby Spinach

- Melt the butter in a large nonstick skillet over medium-high heat. Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes. Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
- Remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
- To make the salad, place the chicory in a large bowl. Add the onion mixture and toss to coat. Add the spinach; toss and serve at once.

I am finally learning how to cook thanks to recipezaar! I haven't really made up any of my own recipes yet, but I have made a lot of the ones posted on here. Asian food is my favorite thing to make, and I also enjoy making desserts (especially cheesecake). I am amazed by how easy it has been for me to learn how to cook. I always used to think cooking was so hard and time-consuming, but I learned that once you have all the ingredients and proper equipment on hand it's not very difficult. I used to only cook stuff in the microwave or in the crockpot, but since I joined recipezaar I have been working my way up to more and more challenging recipes.
