Welsh Onion Cake with Thyme

"This is great with any kind of grilled meat. If you're lucky enough to have leftovers they reheat easily in the oven."

  • Preheat oven to 400 F or 200 C degrees.
  • Peel the potatoes and then slice them wafer thin (best done in a food processor).
  • Rinse the potatoes and shake dry.
  • Peel and halve the onions.
  • Slice the onions as thin as you can but don't separate the slices.
  • Use a quarter of the butter to grease a cake tin or gratin-style dish.
  • Make layers with potato, salt and pepper, thyme and then onion.
  • Repeat until all the ingredients are gone, cutting pieces of butter to go between the layers.
  • Make sure to leave some butter for the final layer.
  • Cover the top of the dish with foil and cook for 45 minutes.
  • Remove the foil and cook for a further 30 minutes or until the top is golden and the potatoes are tender all the way through.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
