  • Place the sweet potatoes, carrots, and bouillon cubes in a large heavy pot and cover with cold water.
  • Bring to a boil.
  • Then reduce the heat and simmer until the vegeatables are very tender, 15-20 minutes.
  • Drain, reserving 6 tbsp of the cooking liquid, and place in a bowl.
  • Using a mixer, whip the vegetables with the reserved cooking liquid and the remaining ingredients.
  • Serve immediately, or reheat in a double broiler or, covered, in a 350 degrees F oven for 15-20 minutes.

I'm originally from Philadelphia but moved to Atlanta in 2003 with my boyfriend. I don't have any children but I do have a very spoiled cat. Thanks to living in the south I now know what great sweet tea tastes like, how to make delicious collared greens, and that fried okra is delicious. I never used to say "y'all" before but now it's become part of my daily vocabulary. I miss real Philly cheesesteaks and hoagies. I love to read (historical fiction is my favorite). I love horror movies. I enjoy watching trashy reality tv shows. Fall is my favorite time of year. Georgia summers are horrible. I like to cook big dinners on weekends and quick easy stuff during the week after work. I have learned a lot about cooking just by being a member here and trying new recipes and I feel like I'm becoming more skilled in the kitchen which is very cool.
