White Chili

ingredients
- 1 yellow onion, chopped
- 1 -2 tablespoon olive oil or 1 -2 tablespoon butter
- 4 (15 ounce) cans great northern beans
- 2 cans cream of chicken soup
- 1 can chopped green chili
- 1 teaspoon garlic (chopped)
- 2 cans chicken broth (or enough for consistency)
- 2 -4 cups cooked chicken, diced or cubed
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 dash cayenne pepper
- grated monterey jack cheese or cheddar cheese
directions
- Saute chopped yellow onion in olive oil or butter.
- Add the beans, cream of chicken soup, chopped green chilis, garlic, chicken broth and chicken.
- Add the cumin and oregano and a dash of cayenne pepper.
- Bring to a boil, simmer about 20 minutes.
- Served topped with gradded monterey Jack cheese or cheddar cheese.
- Serve in crusty bread bowls.

What a delicious thick bowl of chili and so easy to make. Oh no! I just remembered I did not put the cream of chicken soup in. LOL Well since it is about half gone now I'll just put in 1 can. I'll report on that later. Yesterday, 11/19 I made this and forgot to add the soup. I corrected my error and added it. I must say, even though I it was tasty with the soup (4 stars), I really liked it best without (which gives it the 5 stars). So I'm letting my 5 stars stand. Made for *1 2 3 Hit Wonders* game

After reading the other commnents, I added more garlic, cumin and cayenne pepper. Also added a chicken boullion cube. Somehow I only bought 3 cans of northern beans so I also added 1 can of black beans. I will be making this often. FABULOUS flavor. I think I added enough cayenne pepper to give it some kick and it helped clear our stuffy heads from the colds we've had. Hubby and Grandson along with myself all loved it. Thanks for an easy, wonderful recipe that is a little different then your ordinary chili. I'll be making this one many times for the course of the winter.

Very simple, quick and easy to make. It has a good flavor, but reminds me more of a cumin-spiced bean soup (with chicken instead of ham) than it does traditional chili. I think I would add a bit more chiles to this to give a spicier flavor (probably chopped poblanos). I thought the monterrey jack cheese went perfectly with this- not sure I would want cheddar. Overall, very good and worth a second making! Thanks for posting.

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member. It's just a tad boring now and just another recipe site like all the rest. Sad.
