White Chocolate Cranberry Loaf (Light)

"I found this recipe on the message board of Weight Watchers when I had just started WW a couple of years ago (I think it was posted by CrissyBear). I bake often but rarely do I use cake mixes - I made an exception for this recipe and boy was I glad I did! I have baked these often - for hostess gifts or Christmas gift baskets. Everybody loves the taste of white chocolate and cranberries! Can't wait to bake them again!"

  • Preheat oven to 350°F.
  • Prepare 2 loaf pans with cooking spray.
  • Mix cake mix, flour, and orange peel.
  • Add egg, egg whites, water, orange juice, and applesauce.
  • Fold in white chocolate chips.
  • Fold in cranberries.
  • Spread batter evenly between the two pans. Bake for one hour or until a toothpick inserted in the middle comes out clean.

  1. Very easy recipe to follow. I made this for my 2009 Holiday gift bags. I omitted the orange rind, subbed dried cranberries and lowered the temp to 325. I made them in small 6" paper gift pans, cooking 18 minutes then rotating the pans and cooking another 18 minutes. They turned out delicious and will now be a regular in our bags. Thanks for posting.
     
  2. I tagged this one for Zaar tag. Let me begin by saying that after I filled the loaf pan and muffin cups, rather than rinsing the remaining batter from the bowl, I ate it with a spoon. I used the cake mix recipe I posted here (#192436) and made one 8-inch loaf and 9 muffins. This has a moist, dense, cakey texture and the white chocolate adds a lovely touch of sweetness to the beautiful tart cranberries. Thanks for sharing this one!
     
  3. I made six loaves of this bread this Christmas to include in gift boxes for friends and neighbors. All of them loved it! We kept one for us, and it is very good! I found when I got home from the grocery store that the boxed cake mixes I bought were smaller than the 18 1/4 oz called for, but the bread came out very nice in spite of that. Thank you for posting!
     
  4. Wow! What a fabulous combination and so easy to do to! I made this exactly as posted (although I couldn't find the right size cake mix; it seems they've shrunk them now, but it still worked out as I saw in another review). I used two 8-inch pans, which were the perfect size, and they took about 55 minutes to bake perfectly. These would make a lovely holiday gift (if you could ever bear to give them away). Thanks for sharing.
     
  5. Love it! I found some low-sugar white cake mix at the market and this was a good chance to take it for a ride. ;-) Despite being low-fat and low-sugar, this is moist and tasty. I made just as written, baking 2 loaves for ~50 minutes in my erratic oven, tenting with foil during the last few minutes. Not being directed otherwise, I rough chopped the cranberries to get more distribution. Still, both they and the chips mostly sunk to the bottom so a toss in some flour before adding to the batter might be in order. Thanks for posting this *terrific* recipe!
