  1. Process oatmeal in a blender until it's flourlike in texture.
  2. In bowl, mix flours, flax seed, baking powder, pumpkin pie spice, and salt.
  3. In a second bowl, mix milk, banana, oil and egg yolk.
  4. In a third bowl, beat egg white until stiff peaks form.
  5. Mix banana mixture with dry ingredients, then fold in egg whites.
  6. Cook approximately four minutes in waffle iron.
