Whole Wheat Cranberry Orange Muffins

ingredients
- 2 cups whole wheat pastry flour
- 2⁄3 cup sugar substitute (such as Splenda)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 5 tablespoons butter or 5 tablespoons margarine, melted
- 2⁄3 cup orange juice, use juice from can of mandarin oranges, adding enough orange juice to make 2/3 cups
- 3 eggs, beaten
- 3⁄4 cup fresh cranberries
- 1 (11 ounce) can mandarin oranges
- cooking spray
directions
- Preheat oven to 375°F.
- Combine dry ingredients.
- Melt the butter.
- Whisk the eggs and orange juice into the melted butter.
- Add the liquid to the dry ingredients mixing until just moistened.
- Fold in the cranberries and oranges being careful not to mash the oranges.
- Spoon the batter into a muffin tin that has been coated with cooking spray.
- Bake for 15- 20 minutes, or until firm and golden brown.

These were very nice ... texture was great, and the mandarin oranges were a really lovely surprise. I also subbed applesauce for the butter to lighten them up a bit more, and it worked beautifully. The only reason I'm giving these 4 stars instead of 5 is that I now know I don't like Splenda. This was the first time I'd cooked with it, and I taste a real difference between Splenda and sugar. Since I'm lucky enough not to deal with diabetes issues, I'm sticking with sugar! But if you like (or don't mind) Splenda, this is a recipe worth trying. Light, not too sweet, mild orange taste and great cranberry taste. Thanks for posting!

The first batch I made burned on the bottom. I then lowered the oven to 350 degrees and cooked the full 20 minutes with perfect results. I used the Splenda for baking and 1/2 cup applesauce for the butter. I did drain the syrup from the oranges and used real orange juice instead. The orange flavor is not over powering and I might add some grated orange zest should I make these in the future. Also, I added 1/3 cup finely chopped pecans. They are moist, tender and delicious. Thanks for sharing.

<p>My favorite cookbook, well I guess I have 3...The Way to Cook, by Julia Child, the Low Fat Living Cookbook and The California Wine Country Cookbook II. I am retired, due to no longer being able to work because of complications from the Crohns Disease I have lived with since 1971. For a while I didn't even do any cooking or knitting since the inflammatory arthrisis (secondary to the Crohns) was too painful in my hands and feet. Fortunately I am now on a drug protocol that seems to be working, but I am still not able to be as productive as I would like. Still can't work, but I am cooking and knitting again. My husband and I moved to Surprise, Arizona at the end of January 2005. My husband is retired from being in the wine business. I love to cook (and we love to eat) and am always looking for new recipies to try. Due to a slight blood sugar problem my husband has to stick to a diet that eliminates sugars and bad carbs, so I have had to modify a lot of the recipes we like. I love Recipezaar, as I have found so many good, healthy recipes here. I hope you enjoy the recipes that I post as much as I have enjoyed the new ones I've found here.</p>
