Whoopie Pies

  • Cream 1/2 cup shortening, 1 cup sugar and 2 egg yolks (set aside egg whites for filling) In seperate bowl sift flour, cocoa, baking powder, salt and baking soda.
  • add to creamed mixture alternately with milk beating well, add vanilla at the end.
  • Drop by large spoonful on greased baking sheet.
  • Bake at 350 for 10-15 minutes.
  • Remove to wire rack to cool.
  • While pies are baking mix filling ingredients in bowl with electric mixer.
  • Spread filling on one half of pie and put another on top of it.
  • Wrap individually in wax paper.

  3. What a great recipe. Just a note for the readers though. If you want small pies and not huge one, you may want to only but small spoonfuls of batter, because they grow twice the size of the scoop you put on the pan! Alternate frosting: 6 oz of cream cheese 1 tsp of vanilla 2 tbs of milk 1/8 tsp of salt 1 16 oz bag of confectioners sugar Mmmmmm... my husband loves this frosting!
     
  4. Perfect! We adore this recipe at my house. I usually just buy frosting (to avoid using raw egg white). We bring these to every potluck we attend.
     
  5. Loved it! I doubled the batch! However, I did divide the filling into two bowls...making one cherry flavored and the other mint flavored. The cakes are light and very tasty. I added a little extra cocoa powder for my chocolate lovers. This will be a keeper for me!
