  • Pre heat oven to 350.
  • I mention using a food processor but you can just chop everything by hand, just make sure it's chopped very fine.
  • In a food processor add your white onion and garlic and pulse a few times. Then break up your cooked bacon and pulse again. Add your ground meat pulse, add egg, pulse until combined well. If meat is warm or room temperature then place in the fridge for a few minutes. Using your hands make 5 large meatballs the size of baseballs or you can make 10 small golf ball sized meatballs. In a large skillet warm some oil and brown each side of the meatballs, place in a baking dish and bake for about 15 minutes in the oven. You may need to bake less or more depending on the size you choose to make.

  1. My DD boyfriend brought me some ground Elk, so I looked for a recipe I could use it in as an appetizer. This was very nice I made very small meatballs and served them on cocktail picks with a sweet chipolte sauce.
     
  2. Nice! I used bison, made as directed except for browning the meatballs. I did them in the oven from start to finish, about 1/2 hour at 375. I didn't have quite enough bacon and I think it would have been a little bit better if I had the full 6 slices. And maybe a little salt and pepper. Nice to make though. I got 14 medium size beatballs from the 1 lb. of meat. Thanks so much for posting . . . . . Janet
     
  3. I used ground venison. These are amazing! Everybody loved them even my 9 year old who's not much of a venison fan. My daughter helped make them and we got about 12 decent sized meatballs when she formed them.
