“The dressing can be made ahead and refrigerated for a couple of days. This would be great with grilled chicken or seafood. This is so good, I plan on having this one even when cranberries aren't in season! Prep time is not counting time to cook wild rice which can be done ahead.”

Directions

  1. To prepare dressing: combine first 4 ingredients in a small saucepan.
  2. Bring to a boil; cook 2 minutes.
  3. Remove from heat.
  4. Stir in vinegar, oil, salt, and pepper.
  5. Chill.
  6. To prepare salad: combine wild rice and remaining ingredients in a large bowl.
  7. Drizzle rice mixture with dressing, tossing to coat.
