  • Wash and drain well the basil and spinach.
  • In a small skillet, heat garlic and pine nuts in olive oil.
  • When nuts turn golden brown, add prociutto; cook for 2-3 minutes.
  • Pour the mixture over spinach and basil.
  • Add the sliced peach and Parmesan.
  • Fold everything together.
  • Addjust seasoning if needed.
