Wilted Spinach, Basil, and Peach Salad

- 6 -7 cups tightly packed spinach leaves, remove stems and tear larger leaves
- 2 cups basil leaves
- 1⁄2 cup best quality olive oil
- 3 cloves garlic, finely chopped
- 1⁄2 cup pine nuts
- 4 ounces diced prosciutto
- 3⁄4 cup grated parmesan cheese or 3/4 cup romano cheese
- 1 very ripe nectarines or 1 peach, thinly sliced
directions
- Wash and drain well the basil and spinach.
- In a small skillet, heat garlic and pine nuts in olive oil.
- When nuts turn golden brown, add prociutto; cook for 2-3 minutes.
- Pour the mixture over spinach and basil.
- Add the sliced peach and Parmesan.
- Fold everything together.
- Addjust seasoning if needed.
