  • Prepare rice. Chill overnight.
  • Heat oil in a wok.
  • Add eggs. Cook until set. Remove to a plate. Chop.
  • Wipe out wok. Heat oil until very hot.
  • Add rice and ham. Stir-fry 1 minute.
  • Combine the soy sauce, oyster sauce and water.
  • Add to wok. Stir-fry 1 minute.
  • Add peas, carrots and eggs. Stir-fry 2-3 minutes.

  1. Fabulous fried rice. This will be my recipe of choice now. I followed the recipe as written except I used leftover diced pork loin roast instead of ham, I didn't use peas and I added diced green onion and a couple cloves of chopped garlic. I served this with chicken breasts which were barely touched because everybody filled up on the fried rice. I think I'll dice up the chicken and use it in the next batch I make of this wonderful rice. Additional Comments supplied at another time: Tonight I made this wonderful rice using diced chicken breast in place of the ham and added about a 1/2 cup of diced green onion at the same time as other vegetables were added. One comment I'd like to make is that I believe this recipe serves more than 2-4 as stated in the recipe; it probably would serve 4-6 people easily.

Apart from adding a minced onion and 4 cloves of minced garlic before adding the rice and ham to the wok, and adding a handful of bean shoots in the last 30 seconds, I made this exactly to the recipe. Very quick to prepare, very versatile (there’s no limit to the vegetables you could use in this: whatever was on hand basically) and delicious! I am really pleased to have found this recipe, which I have made for Pick a Chef 2006, as the blend of soy sauce and oyster sauce was very much to my liking (I don’t like hot and spicy flavours). Thanks for sharing this recipe, Lori 13! We enjoyed this, and it’s one I’ll be making again.

  4. I love this fried rice. The oyster sause is mandatory because it gives the rice a great taste. I prepare instant rice, I refrigerate it and cook it for dinner. Use only small diced frozen veggies so everything cooks evenly and enjoy. It is very good!!!
