  • Preheat oven to 375. Spray baking dish with cooking spray.
  • In a bowl, whisk together milk, 3/4 cup of the cheese, sour cream, Dijon mustard, and pepper. Set aside.
  • Layer half of the potato and onion slices in the bottom of the dish.
  • Pour over half of the milk-mixture. Top with remaining potatoes and onions, then pour over remaining milk mixture.
  • Scatter over the remaining 1/4 cup of cheese.
  • Cover with foil (sprayed with cooking spray, so that the cheese doesn't stick to it later)and bake 45 minutes.
  • Uncover and bake 30 more minutes more, or until potatoes are tender and cheese is golden and bubbly.

  1. I used O'Brian hash browns 16 oz slightly thaw ed. I followed the rest of ingredients. and baked uncovered for an hour. Family loved it. I had 1/2 cup so gave it 5 points on ww blue.
     
  2. This was good, considering the WW pts value. Of course, it's not as cheesy/rich as higher fat versions, but it is a perfectly good substitute. Left out the onion (personal preference) and will definitely make again. P.S. 1 lb of potatoes will never feed 8. Must be a typo. You can use up to 2 1/2 lb of potatoes and it still comes in at 3 pts. each for 8 servings.
     
  3. We loved this! Nice comfort food. I did cut the recipe in half and used an 8X8 dish. Worked great. The dijon mustard gave it a nice little kick. The sharp cheese did give it that rich flavor that you enjoy in scalloped potatoes. Thanks Lee tah for posting.
