  1. Place dried yellow-eyes in a bowl with 6 cups water, set aside to soak overnight (or minimum 8 hours).
  2. Drain and rinse the overnight-soaked yellow-eyes.
  3. In a medium saucepan, combine soaked yellow-eyes, sliced onion, chicken stock, and remaining 2 cups water. Bring to a boil, then boil for 5 minutes.
  4. Reduce to medium-low for an hour.
  5. Add sliced bratwurst and cook at medium-low for another 30-60 minutes.
