- 1 cup dry yellow-eyed peas
- 1 small onion, sliced
- 2 bratwursts, cooked, sliced
- 2 cups chicken stock
- 8 cups water, divided
directions
- Place dried yellow-eyes in a bowl with 6 cups water, set aside to soak overnight (or minimum 8 hours).
- Drain and rinse the overnight-soaked yellow-eyes.
- In a medium saucepan, combine soaked yellow-eyes, sliced onion, chicken stock, and remaining 2 cups water. Bring to a boil, then boil for 5 minutes.
- Reduce to medium-low for an hour.
- Add sliced bratwurst and cook at medium-low for another 30-60 minutes.
