Yellow Eyed Peas

"When we moved to NC I never understood the love for a pot of pinto beans; or black-eyed peas. Then, we found dry yellow-eyed peas at a local farm store and I fell in love. This is how we love to make them, and if we get around to it we'll make some cornbread to serve alongside."

  • Place dried yellow-eyes in a bowl with 6 cups water, set aside to soak overnight (or minimum 8 hours).
  • Drain and rinse the overnight-soaked yellow-eyes.
  • In a medium saucepan, combine soaked yellow-eyes, sliced onion, chicken stock, and remaining 2 cups water. Bring to a boil, then boil for 5 minutes.
  • Reduce to medium-low for an hour.
  • Add sliced bratwurst and cook at medium-low for another 30-60 minutes.
