Ingredients Nutrition

  • 2 lbs yellow squash, sliced
  • 2 onions, chopped
  • 1 cup mayonnaise
  • 3 eggs, beaten
  • 12 saltine crackers, crushed
  • 1 teaspoon salt
  • 1 (1 ounce) package ranch dressing mix
  • 1 cup breadcrumbs, mix with
  • 14 cup melted butter
  • 1 cup cheese, shredded

Directions

  1. Cook squash and onions until tender; drain. Add all other ingredients except breadcrumbs, butter, and cheese.
  2. Pour into a 8x8x2-inch baking dish coated with cooking spray.
  3. Top with mixture of breadcrumbs, butter, and cheese.
  4. Bake at 325 degrees for 30 to 40 minutes.
