ingredients
- 1 cup brown sugar
- 1⁄2 cup margarine
- 2 eggs, lightly beaten
- 1 tablespoon lemon juice
- 3 ripe bananas, mashed
- 1⁄2 cup plain yogurt
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup chopped walnuts
- 1 tablespoon grated fresh lemon rind (optional)
directions
- Cream sugar and margarine.
- Add eggs and beat well.
- Stir in lemon juice, bananas, and yogurt.
- Sift together flour, baking powder, and salt.
- Stir into the yogurt mixture.
- Mix well.
- Fold in nuts and rind.
- Pour into a greased a floured loaf pan.
- Bake at 350F.
- for 50-60 minutes or until a tester comes out clean.
- Cool on a wire rack.

This was incredible bread. With the ingredient at home I had to substitute a few. I used organic brown sugar, 1/2 cup of butter, 1/2 cup organic vanilla yogurt, and unbleached white flour. I also put the walnuts on the bottom of a greased loaf tin so they would bake into the top. I omitted the lemon rind since I did not have any. When it was finished I inverted the bread so the walnuts were on the top and made a topping of 1/4 cup of melted butter and some organic sugar to drizzle over the top. It formed a yummy crusty top. I will probably always use this recipe from now on. Thanks SOOOO much!

Very moist & dense. I loved the fact it was made with whole wheat flour, but wasn't sure how hubby would react (and I didn't tell him there was yogurt in it, either!) He likes it! I also substituted orange juice & orange rind, since he doesn't like lemon. Excellent bread - a nice change from the usual banana bread. I will make this again - thanks for posting! -M :-)

I agree with you - This bread is WONDERFUL! Also, it is more healthy than banana bread made with white flour or all-purpose flour. It makes a healthy and filling breakfast for children. I just made a loaf for my little 7 yr old friend, Abi, and I'm gifting it to her tonight. I love the aroma of the bread while baking it. BTW, I did use Black walnuts(that I received as a present from Uncle Miller just y'day) for the walnuts! I did not add the fresh lemon rind. Thanks for posting! I'll make it again, very soon!
