  • Beat eggs, yogurt, milk, salt, cinnamon, nutmeg, and vanilla in a mixing bowl.
  • Heat a lightly oiled skillet over med-high.
  • Dunk each slice of bread into egg mix, and soak both sides.
  • Place in pan and cook on both sides until golden.
  • Serve hot and top with yogurt and fresh berries, or your favorite syrup.

  2. This is a very easy and healthy breakfast. I always use the whole-wheat raisin bread for this; it tastes nearly the same but is much better for you. Instead of serving this with maple syrup, I mix equal parts frozen berries and vanilla yogurt in my blender. TIP: Whenever a recipe calls for ground nutmeg, take the time to grind your own instead;the taste (and fantastic smell) just does not compare to a jar of ground nutmeg.
     
  3. Thanks for a quick, simple, healthy breakfast idea. I used Sara Lee cinnamon raisin bread and do agree a thicker bread would have been better. I will search out our local bakery for an unsliced loaf next time. The spice flavor was subtle but quite nice.
     
  4. I think this recipe has some real potential! I used a low carb blueberry yogurt & didn't use any salt. I just used my regluar Sara Lee whole wheat bread. I cooked it on my nonstick griddle at 350 but had some problems in knowing exactly when to turn the bread over! I timed it at around 2 min but next time will let it cook at at least 3-4 min. I like my french toast brown & toasty & as crisp as possible so I will play with the cooking times. I do think different flavor yogurts will work fine, which is always a plus. This is a keeper; thanks for sharing :-).
     
  5. I made this today for breakfast and Isaiah and I both enjoyed it. I like the fact that its healthy! I will definitely increase the spices next time though. (I halved the recipe for 1.5 servings) Other than that, very good:)

Since April 2008, I have been a vegetarian. I dont eat creatures...that's the easiest way to put it! :D I still eat a small amount of dairy, but not very much. I have been missing around here for a while, and hope to poke my head in a bit more often from now on... I hope you enjoy my recipes...
