Yum Yum Banana Bread

"Another family classic, easy and yummy! The riper the bananas the better. I quite often throw in a handful of chocolate chips. In a pinch, you can use ordinary vegetable oil (not olive oil) instead of the melted butter."

  1. I have now made this bread three weekends in a row, only using oil instead of butter, and it has been wonderful every time. Easy, very few steps and ingredients, perfect for this busy mom of four. thanks much!

  2. Of all the recipes for banana bread, this has consistently been the best. The recipe is simple, and the results are moist, banana-ful, and delicious.

  3. One way to clean out the freezer of frozen bananas!!! I doubled the recipe and put it in 3 small loaf pans. I like doing it this way 1) the loaves cook better and does not burn the tops before the inside is cooked and 2) because I can freeze them and cut off a piece of bread when I need it. I like to have banana bread made up ahead of time, so if needed I could make a simple dessert of Banana Bread Pudding. This recipe was fast, easy and had a wonderful intense banana taste! I took the suggestion of other reviewers by using vegetable oil instead of butter and added some vanilla extract. Thanks for the posting!!

  4. Very quick and simple recipe. Followed to a T, but added 1/2 cup of chopped walnuts. I definitely will use this recipe in the future again.

  3. I have made this so many times and so many different ways! Sometimes I throw chocolate chips in, sometimes cinnamon chips. I have also used peanut butter instead of the melted butter. I also normally make them into muffins - makes 12.

  4. Lovely banana bread recipe! I made it as stated, except that I used Splenda Brown Sugar Blend instead of sugar. The loaf is probably not as dense as it would be using real sugar, but it is still extremely delicious and has a great texture. So simple and so good!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. If I don't reply to a message about one of my recipes, now you know why! Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing! When I'm not eating I love to take pictures and travel with my husband. <img src="http://i3.photobucket.com/albums/y53/DUCHESS13/World%20Tour/ZWT2.gif">
