1 9-by-13-inch cakes
ingredients
- 2 cups flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 1⁄2 cups sugar
- 3 eggs
- 1 cup oil
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 (1 lb) box dried pitted prunes (or plums)
-
Cake Sauce
- 1⁄2 cup butter
- 1 cup sugar
- 1⁄2 cup buttermilk
- 1⁄2 teaspoon vanilla
- 1⁄4 teaspoon baking soda
- 1 cup nuts (optional)
directions
- Preheat oven to 350 degrees. Place prunes in pot with 1/4 cup water. Cook until prunes are soft but not mushy. Drain water and slightly mash the prunes into small chunks.
- Place all ingredients including prunes in a mixing bowl and beat until ingredients are combined. Pour batter into an ungreased 9-by-13-inch pan.
- Bake for about 40 minutes or until cake tester comes out clean. Remove cake from oven and, with the tines of a fork, poke holes in the cake.
- For the cake sauce, combine butter, sugar, buttermilk and vanilla and bring to a boil. Remove from heat; add the baking soda and stir. At this point you may add the nuts (optional).
- Pour the sauce over the cake (you can make some holes with a fork first). Let cake sit and cool before cutting.
