  • Saute the first three ingredients together in a large kettle (you don't need any oil and be sure that the pan you use has a lid).
  • No need to drain.
  • Add the spices and the rest of the ingredients.
  • Simmer on low for an hour, to let all the flavors mix.
  • Serve with non-fat sour cream or low fat shredded cheese.
  • This is a variation on Mom's chili, which uses ground round.
  • It's not too spicy, but you can kick it up with more spice if you like.

RECIPE SUBMITTED BY

I'm a middle aged divorcee without children. Although friends are jealous of the free time I have, I do like recipes that are quick, yet satisfying. I don't like spending a lot of time putzing in the kitchen or doing a lot of cleanup. I'm a recent survivor of a heart attack, so have dramatically adjusted my diet. I'm hungry for tasty, yet low fat and low sodium recipes. I'm finding that there are oodles of simple, but good recipes on this site, so wanted to start sharing some of my own.
