  1. Prepare the dressing:
  2. In a small bowl, combine vinegar, oregano, salt and pepper. Slowly add olive oil, whisking to combine. Set aside.
  3. Rinse and drain beans.
  4. Dice tomatoes, bell pepper, onion, cucumber. Remove excess liquid from tomatoes.
  5. Put vegetables and beans in a large bowl.
  6. Toss dressing with salad. Add feta, lightly toss.
  7. Best if refrigerated for an hour or two before serving (that is -- if you can wait that long).
  8. Serve over lettuce leaves if desired.
