Zone-style flourless pancakes

"If you don't have a blender, you can use a food processor. Or, pulverize the oats in a coffee grinder and use a hand blender to mix the ingredients together. These pancakes are designed to fit a Zone-style diet, and are especially good with blueberries or raspberries added and topped with cream cheese."

  • Combine all ingredients in a blender and blend well.
  • Pour into a hot, no-stick pan and cook like a regular pancake.
  • Turn pancakes when bubbles form on uncooked top.

  2. Yummy! These are delicious and filling! Made exactly as written. I may add a little water next time as mine came out a bit thick, but they were still awesome! Always on the lookout for new Zone recipes...this is a keeper!
     
  3. These are the best pancakes ever! I used oat flour, fat free cottage cheese, Eggbeaters & add a good amt of cinnamon-oh, and Splenda! I also left out the baking powder & didn't miss it. Fantastic & filling. Thanks for sharing!!
     
  4. These are fantastic! I left out the cinnamon and put a pinch of salt in because I like my pancakes to have that old-fashioned salty taste. I actually forgot to use the egg white, and they came out fine.
     
  5. I used dry slow-cooking oatmeal (which has more carbs) and 1 cup raspberries (blended into the batter), which upped the carbs quite a bit, and used 2 egg whites. I also stirred 2 T. slivered almonds into the batter before cooking. To counter the lack of protein, I made 3 scrambled egg whites topped with 2 oz lowfat cheese. This served DH and myself. The pancakes were sweet enough that we just ate them as is, with no toppings. I will be making these pancakes ahead of time & keeping them in the fridge to heat up for quick breakfasts on the go. Thanks for a great recipe!
