ingredients
- 1⁄3 cup oatmeal
- 1⁄3 cup 1% fat cottage cheese
- 1 whole egg
- 1 egg white
- 1 tablespoon sugar (or sugar substitute)
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- cinnamon
directions
- Combine all ingredients in a blender and blend well.
- Pour into a hot, no-stick pan and cook like a regular pancake.
- Turn pancakes when bubbles form on uncooked top.

I used dry slow-cooking oatmeal (which has more carbs) and 1 cup raspberries (blended into the batter), which upped the carbs quite a bit, and used 2 egg whites. I also stirred 2 T. slivered almonds into the batter before cooking. To counter the lack of protein, I made 3 scrambled egg whites topped with 2 oz lowfat cheese. This served DH and myself. The pancakes were sweet enough that we just ate them as is, with no toppings. I will be making these pancakes ahead of time & keeping them in the fridge to heat up for quick breakfasts on the go.
