Kim's Leftover Roast Sub Sandwiches

ingredients
- 16 ounces leftover shredded cooked beef (or more) or 16 ounces cooked pork (or more)
- 4 slices provolone cheese
- 4 banana peppers, sliced
- 1 vidalia onion, sliced
- 8 ounces leftover pan juices or 8 ounces broth
- 4 submarine buns
- 1 tablespoon oil or 1 tablespoon butter
directions
- Shred the meat. Brown some onions in a little oil or butter.
- Slice up some banana peppers, and heat the juice up in a sauce pan.
- Open up the sub bun and place a slice of provolone on the bun. Layer the meat, onions, and banana peppers on the sub bun.
- You can microwave if you like, but i prefer to warm the subs in a 4oo degree oven for a few minutes.
- Place the juice in some saucers, and dip the sandwiches in the juices.

I live in Michigan as you can see. I have been married to my wonderful husband for 17 years, and together for 20. I have one daughter who is 22 years old, has a fiance, and cute little puppy. She just made me a very proud grandma this September 16th for the first time, and will be getting married next August 2nd.

I spent last winter and some of the summer going to Cosmetology School. I have finally graduated, and passed both the state boards.
I love to snowmobile, camp, canoe, skate, read, spend time with family, cook and entertain. Of course like every one else here I spend a lot of time on Zaar. I love this place.
