Raspberry-Cinnamon French Toast

- 12 slices cinnamon-swirl bread, cubed
- 5 eggs, beaten
- 1 3⁄4 cups milk
- 1 cup packed brown sugar, divided
- 1⁄4 teaspoon ground cinnamon
- 1⁄4 teaspoon ground nutmeg
- 1⁄2 cup slivered almonds (optional)
- 1⁄4 cup butter, melted
- 2 cups fresh raspberries or 2 cups fruit, of your choice
directions
- Place bread cubes in a greased 13 x 9 baking dish. In a bowl, combine the eggs, milk, 3/4 cup brown sugar, cinnamon and nutmeg; pour over bread. cover and refrigerate for 8 hours or overnight.
- Remove from the refrigerator 30 minutes before baking. Sprinkle almonds over egg mixture. Combine butter and remaining brown sugar; drizzle over the top.
- Bake uncovered, at 400 degree F for 25 minutes. Sprinkle with raspberries. Bake 10 minutes longer or until a knife inserted near the center comes out clean.

What a wonderful treat. I scaled it down for one person and had it for lunch. It was so good, the french toast was light, moist, tender, spicy and oh so flavorful. I loved the addition of the raspberries and nuts all the flavors compliment one another beautifully. A dish that I will make again. Next time I won't cook it so long...the icing sugar was a personal preference only.

All I can say is FABULOUS. What a satisfying and filling meal this makes. I used blueberries as my fruit and omitted the slivered almonds per family preference. Of course I love the flavor combo's of cinnamon and nutmeg and then w/the cinnamon-swirl bread made this heavenly. Served w/sausage patties. Thanks Glo for another great one. You did it again! Sweet! Nice! Quick! Delicious! Quite the winter-time breakfast treat. Served with Swedish potato sausage, pineapple-orange juice, and good conversation on a Saturday morning with the kids all around the table (for once!). Added a bit of eggnog for part of the milk, used 9 slices wholewheat bread, too, tossed with a few dashes of cinnamon. Hubby said he'd rather not have the almonds on it--but otherwise loved it, too. <p>Update: I have changed my profile picture in honor of my dear best friend and loyal companion that I lost to cancer on 6/25/11. Maxx was the best dog that anyone could ever hope to have in their life. Until we meet again, sweet boy, you will be forever in my heart and memories. I currently live in the country with two dogs (a 12 pound poodle mix named Suki and a new member to the family, a 7-month old(?) 7.5 pound terrier mix named Angel ). I got Angel from the dog pound a week after I lost my beloved Maxx. Suki and I both needed a new companion to help us cope with our loss. Nothing will ever replace Maxx, but she has helped to uplift Suki's spirit. I am a secretary for a county school board. I love to cook, bake, crochet, paint, sew, read and anything to do with crafts. I was born in Tokyo,Japan. My father was in the Air Force and my moher was Japanese. I love to cook (and eat) a variety of foods from many different nations.
