16 Bean Soup (Crockpot)

"This is a great recipe to start in the morning and have ready when you come home. I love the packages with 16 kinds of beans...they make the best bean soup. They don't come with a prepackaged mix or anything like it sounds--the 16 bean soup mix is just a package of 16 kinds of beans. I didn't have turkey Italian sausage so I used regular spicy Italian sausage, and I added a couple potatoes just because I love them. Recipe is posted as written. Serving size is estimated.   • Combine bean soup mix, bay leaves, oregano, chicken stock, and enough water to cover the beans by 1" to 2 " in crock pot.
  • Cook on high for 2 hours.
  • Add remaining ingredients and shift cooker to low. Cook for additional 3 hours.
  • For more zing, add cayenne or crushed red pepper when adding second set of ingredients.
  • Serve this as a complete meal or over rice if desired.
  • Freezes well.

  1. Deeeeelicious!!! I don't have a crockpot so I chopped the carrots, celery, onions and garlic and saute'd in a tsp of Olive Oil. Then added the oregano, bay leaves, beans, a 14oz can of Italian style diced tomatoes,a smoked ham hock and 8-10 cups of water [enough to cover the ham hock]. Brought it all to a boil and let it simmer. Meanwhile, I peeled the skin off one Italian sausage link & browned it, put it in my bullet and shredded it. I added it to the soup after about an hour of it simmering. Total simmering time...2-2 1/2hrs. Everyone couldn't stop raving! Thank you for sharing!
     
  2. This a wonderfully hearty soup. The recipe is simple and easy to throw together quickly. What we liked most about it was how great it tastes in it's simple form, but also easy to tweak to make it your own. We browned our sausage slices first, as well as adding 1 tsp of curry, 1 tsp sage, and 1 tsp chilli powder. Highly recommend this as a go-to, easy recipe. [NOTE - it take a couple more hours for everything to soften. After browning the sausage, we put everything in together and put it on low for the whole day. About 8 hours on low.]

  4. Delicious! Bean prep time definitely needs to be adjusted. Beans were not ready with suggested cook times. Maybe soak them the night before or boil them first to speed it up. Otherwise was really good. We were shocked no salt or pepper was even necessary flavor was so good. We cubed a whole muscle ham for the meat.
     
  5. My second time making and this time the water was below the beans after 2 hours on high. So, I added the second round of ingredients and about 16 ounces of chicken broth. I also took another reviewers suggestion and added teaspoon of chili powder and salt. The beans were no where done at the 3 hour mark on low. One would have had to soak them ahead of time. At about 8 hours they were perfect. Great for cold weather or when spring time can’t let go of winter temps and your stuck at home due to Covid-19.
