  1. In a large skillet, cook potatoes and onion in
  2. margarine over medium heat for 8 to 10 minutes or until tender.
  3. Stir often so potatoes and onion don't stick.
  4. Beat together eggs, milk, salt and pepper.
  5. Stir in ham.
  6. Pour over potato mixture. Cook until fluffy like scrambled eggs.
  7. Take extra care not to burn eggs.
  8. Enjoy!
