- 1 (16 ounce) package capellini (angel hair pasta)
- 1⁄4 cup olive oil
- 1⁄4 cup chopped fresh parsley
- 4 cloves garlic, finely chopped
- 1⁄2 cup freshly grated parmesan cheese
- fresh ground pepper
directions
- Cook pasta as directed on package.
- Meanwhile, heat oil in a skillet over medium high heat.
- Saute parsley and garlic in oil.
- Drain pasta well and mix with garlic mixture; top with cheese.
- Serve with pepper.

Yum! Read the reviews and then decided to add a can of petite diced tomatoes. I doubled the parsley and the garlic. Also, I had just made bacon so rather than using the olive oil, I just threw everything in the bacon pan (poured off almost all the drippings). Gave it a really good smoky flavor - so much that I will do the same next time and maybe add a bit of crumbled bacon. So I made some significant changes, but this is a great basic recipe. Thanks!

Loved this recipe!! So simple and subtle but so delicious. I just kinda eyeballed everything. I added some Sherry cooking wine, some lemon juice, and I didn’t have any Parsley so I just put a few pinches of dried oregano for the leafy color lol. I put a bunch of shredding Parmesan on top and it was excellent!!

added a little kosher salt, butter, dried basil, and oregano to the olive oil garlic mixture. Also, used granulated garlic in addition to minced. Reserved a little pasta water to add to pasta in storage container to keep it from drying out. Did not add parmesan since my daughter is a picky eater. Great and easy recipe and if my 4 yo likes, it’s a keeper.
