Baked Chicken Breasts With Mango Chutney Sauce

- 3⁄4 cup mango chutney
- 3⁄4 cup plain yogurt (2% or 1% is)
- 2 1⁄2 tablespoons Dijon mustard
- 3 tablespoons fresh ginger, minced
- 1 1⁄2 tablespoons all-purpose flour
- 12 boneless skinless chicken breasts
directions
- Pre-heat oven to 375 degrees.
- Combine chutney, yogurt, mustard, ginger and flour. Set aside.
- Arrange chicken breasts in a single layer in a baking pan. Spoon chutney mixture over chicken.
- Bake uncovered for 35 minutes, or until no longer pink in center. Remove from oven and let stand 5 minutes.
- Spoon any baking juices over top before serving.

This was very tasty - I scaled it down for 2 chicken breasts. We don't care for Dijon mustard so I just used a brown mustard. I also seasoned the chicken with salt, pepper, and garlic powder. I then sauteed on one side in a little olive oil and then flipped it - I then put the sauce on top and stuck it in the oven at 350F for 25 minutes. Came out perfect! Thanks for posting a delicious and easy chicken recipe!

Most of the recipes I post have been successful with clients or family over the years however I am pretty lazy about entering them in my cookbook, but I am getting better. Also after being online for years I am utilizing Recipezaar as a means to organize all my online saved recipes and recipes yet to try. My other work days are working with my Dad in the Family Business which is in Transportation .
