Baked Sausages With Potatoes and Cheddar

"This simple, comforting dish relies on the use of good quality sausages as the main seasoning comes from them. I like to use garlic sausages, but choose your favorites. It is easily assembled and with the addition of a side vegetable you have an entire meal. If you are having problems with the metric quantities, don't forget to try the handy "Change size or US/metric " link next to serving size!"

  • Pre-heat oven to 190°C.
  • Cut each sausage into three chunks.
  • Peel the potatoes, and slice each the thickness of one finger.
  • Mix the sausages, potatoes, onions, olive oil, salt and pepper together in a large bowl.
  • Transfer the mixture to an oven-proof baking dish large enough to hold it in one layer.
  • Place in oven and bake for 45-60 minutes until the sausages and potatoes are cooked through and browned, stirring two or three times during this time.
  • Remove from oven and check seasonings, adding more salt and pepper if needed.
  • Cover with the grated cheddar and return to the oven just long enough for the cheese to melt.
  • Remove and serve!

  1. We made this for our two kids (and the adults) and it was simple and very good. We didn't have the red onion, so just used the sweet onion and it was fine. Next time we may cut the sausages smaller, and use a tex mex cheese blend. Yum!
     
  2. A very easy to prepare & cook dish. I first boiled my sausages to remove some of the fat from them before slicing into thirds. I served this dish with steamed julienned carrots & broccoli over which I had poured Miss Annie's Lemon Dijon Cream Sauce. A keeper for me. :)

  4. I also used Italian sausage and added in some garlic powder. I added a salad and some bread for a quick, easy to prepare meal. Thanks for sharing!
     
  5. I used mild italian sausage and added a bit of lemon pepper, black pepper, and garlic powder. A nice supper and even better warmed up the next day for lunch.

I am an American married to a Belgian, and have lived in Belgium since December 1999. Cooking is my major hobby. I'm also an avid reader, but I have difficulty finding the time. I love to travel. I've seen at least parts of most regions of France, as well as parts of Germany, Austria, a great deal of Switzerland, Slovenia, Croatia, Luxembourg, and Monaco. I'm absolutely in love with the Bay of Naples and Sorrento coast areas of Italy, which my husband and I recently re-visited on a trip that included Rome, Puglia, Umbria and Marche. I'm still looking forward to Ireland, Spain, Portugal, the Czech Republic . . . the list is too long ! One of the bonuses of travel is getting to taste the local cuisine, and afterward trying to figure out how to duplicate it at home. I think cooking is one of the nicest things a person can do for someone they love (including themself!) I had to submit a picture with me and my cat, Sophie, as she insists on sitting in my lap when I'm sitting at the computer. If you are wondering what all that stuff hanging on the wall behind us in the photo is, it is just a small part of my husband's military medal collection. He was appalled by my posting this picture-- Our study is the messiest room in our house (thank god!)
