Banana Buttermilk Pancakes

"This is a great way to use up overripe bananas and it's a yummy alternative to regular pancakes."

  • Beat all ingredients together until smooth and fluffy.
  • (The more air in the batter, the lighter the pancakes.) Pour about 1/4 cup onto hot griddle for each cake.
  • Turn when batter bubbles.
  • Cook until lightly brown.
  • Serve with warm maple syrup.

  1. Delicious! Light and tender. I made half as suggested, and added some mini chocolate chips to the rest while cooking. The kids went nuts for both versions, so I froze the leftovers and have been heating them up for breakfast. What a timesaver in the morning!Will definitely make these again. Thanks for sharing!

  3. Really good! I also used all whole wheat flour & used 1/2 cup Splenda. I might try used whole wheat pastry flour in place of the white flour next time-just to see how it works. I just used 1 tsp cinn, applesauce for the oil & 2 cups buttermilk. I got a LOT of pancakes out of this-I used about 1/4 cup of batter & got about 24! Great to use up some ripe bananas.
     
  4. These were great! Half portion wheat flour made me feel good as it is healthier than using all purpose flour only. So, eating a bit healthier and still eat things I like is awesome! Made it for my family and coworkers. Got great reviews! Will be adding some walnuts and chocolate chips (semi-sweet) to make it for some family friends.

  2. Delish! My son is a pancake lover and he thought these were great. I used 2 frozen bananas (thawed), all white flour and put about 1/2tsp vanilla instead of the nutmeg. (I didn't use the nutmeg becuase ds probably wouldn't have cared for it - for me I would have used it!) Another way to use up the too ripe bananas - yeah. The recipe made 14 (1/3 cup) panckes.
