My family went crazy over this recipe. I did make one change: I added imitation banana extract, which I often do with banana recipes, since the strength of the taste of old bananas can be variable. They were flavorful and a huge hit with the family! Served them with jerk chicken and cuban style rice.

I would never have thought of making these little cornbread banana fritters. The were similar to cornbread patties with a strong banana flavor. They were a bit plain, but then I did leave out the cayenne pepper (I just don't like hot food). I made my fritters about the size of a peach, and got 13 fritters from a single recipe. Update: I actually liked these better the following morning. I used them as an easy on the run breakfast. I zapped them in the microwave for about 30 seconds, wrapped them in a paper towel, and they were a great finger food style breakfast.
