Beans and Sausage

"I needed more recipes with beans to up fiber in my diet.  I used uncured, mesquite smoke (flavored) turkey sausage to make this extra heart healthy.  Definitely a comfort food and so simple to make!"

  • Cut sausage into bite sized pieces.  Fry in olive oil on medium heat until both sides are nicely browned.
  • Add in beans, chicken broth, garlic, spices, pepper, and tomatoes.  Bring to a slow simmer and simmer for about 10-15 minutes.
  • Add in spinach and cook just until it's wilted.
  • Serve.
